Lean high protein turkey meatball muffin recipe - low carb and low fat

For this week’s meatball muffins I used the following ingredients:

– 2 packages of 99% lean ground turkey from Stop & Shop

– a handful of Nature’s Promise Organic Oats

– Mrs. Dash Original Seasoning

– Italian Seasoning

– 1 whole egg

– 3 tbsp Walden Farms Ketchup

– 3 tbsp Classic Yellow Mustard

– 1 cup of frozen chopped spinach

– 1/2 cup of chopped white or yellow onion

Another thing you can do when you make meatballs like this is put some vegetables in them. Even if your kids or family don’t like vegetables, by chopping them up and hiding them inside the meatballs they will never taste them! This week I used spinach but I’ve also used carrots, asparagus and kale and they all tasted delicious! Leafy greens are a great source of fiber so I usually opt for them when I can in meatballs.
