A quick and easy recipe for ground turkey stuffed green peppers
If you’re looking for a great high protein appetizers or meal prep snack you may just want to head to your grocery store to stock up on items to make this tasty and delicious recipe. I love making chili but sometimes you get bored of just putting it in a bowl or cup – that’s when you make your own containers with vegetables like red bell peppers or green peppers! I learned this trick from a co-worker and wanted to give it a whirl…and let me tell you they are amazing! It is perfect for those of you on higher protein diets but don’t want a ton of fat or carbs with the meal. It is also great for putting into Tupperware for your meal preps too. I tried making these this weekend and they are already a new staple item in my future meal preps. Just grab a fork and you are good to go when you get hungry mid day or mid afternoon.
Ingredients you will need to add to your shopping list:
Full sized green or red peppers (3-4)
99% lean ground turkey (1 pack)
Organic diced tomatoes (1/2 can) or fresh diced tomatoes 1 cup
Low Fat Organic Cheese Shredded (optional)
Chopped onion (white and red)
Italian Seasonings (I like Mrs. Dash or McCormick’s)
Diced red and green peppers
You can add more vegetables if you’d like. I would suggest also trying to add in some black beans, corn, peas or carrots. You can add whatever veggies you would like, they will all work fine. First thing you need to do is preheat your oven at 350 degrees. Cut the tops off of the large peppers and scoop out the insides. Put them on a baking sheet with aluminum foil to wrap them and let them heat up in the oven alone for about 15 minutes. While you do that get your skillet ready by spraying some organic olive oil or organic coconut oil and them put on a medium heat to add your meat, veggies and seasonings.
Once those are cooking up nicely you can remove your peppers from the oven and let them sit. Tend to your skillet and get everything cooked and keep an eye to make sure the ground turkey cooks all the way through. Chop it up so the meat is finer and not in large chunks. Once that is all cooked you can turn off the stove top and start to fill the peppers with the delicious filling.
Pack them full of the filling and push it down with the back of the spoon. It will pack down nice and tightly. At this point you can decide if you want to put some cheese on top. I like cheese but I get mine low fat and at a Trader Joe’s usually or Whole Foods. The light mexican blend is really tasty and melts well. Get ready to put these back into the oven and let them bake for 15 minutes, or until the cheese melts all the way.
Then you can take them out and let them cool. You may want to put them on a plate with a paper towel as they may have some juice from the meat. Let them cool a bit and then grab a fork and enjoy!
